03 WG--I use setting 3 for solo, setting 5 for 2-up. We are about the same as you weightwise.I just tested various settings until I felt best about the ride. Nothing specific given in the manual--good luck.
The wrap around strap works just fine or you may be able to adjust with bare hands.
I weigh 270 and my girlfriend weighs about 110 or so, I use the last setting for 2-up and the 4th for just me. That info will probably not do you much good being that our weight is much higher than yours.
As far as adjusting goes, if I have the bike on a stand with the rear wheel off the ground I can do it by hand. If it is on the ground I can use a strap wrench if I pick up on the rear of the bike some (my strap wrench sucks), but I have to use the spanner wrench if I just adjust it normally.
We, the wife and I , are about 60lbs more than your set-up. I usually run at the 5th setting. But we have really crappy roads(and chuckholes) here in Michigan, do to the weight restrictions(or lack thereof) on our roads. You don't know how many times I've expected to blow a tire hitting a chuckhole. You may be safe on the 4th setting. As for the strap wrench, never tried it, I stick with the spanner, and I've had no problems.

Assuming you're running the stock Dunlops, rear PSI should be 36 for solo and 40 for two-up. (Front tire is 36 psi either way.)
