I have horrible back problems and I'm looking for a seat that will fit a 2007 street bob that has a high backrest. I've seen a picture of one on here once but can't find it again.
All depends on how much you are willing to spend. I have a Corbin Dual Tour with a backrest on my '06 and love it. They make a solo that will do a backrest as well.
Damn these things are $$$. Is there an after market bolt on that will work in conjunction with the stock seat to provide a backrest. I know they are mode for the touring bikes...haven't seen any for dynas.
Roll bag mounted (lazyrider or bikers friend) on a motherwell rack is your best solution ... I always strap a bag on the rack when doing a long trip and adjust it with bungies so it pushes against my back as i ride ... no back problems.
I made one using a stock Wideglide seat and some fabbing skills. The Wideglide seat has a space between the rear and driver seat so you can bring the bracket up through it.

The only high one I know of is a combination solo backrest / luggage rack by Fehling. And the only place you can get it in the states is Two Wheel Touring (www.twtouring.com). They don't normally stock it but Ian can get it for you in a couple of weeks. I think I paid $199 for mine last Spring and used it all season. I went on a couple of long trips including a 2 week 1600 mile vacation and that backrest really feels great! It's high and has a thick cushion - very comfortable. It doesn't work with a passenger seat - tho it is relatively easy to take on/off. It pushes you forward slightly until you learn to lean into it. The cushion is the thickest I've ever seen on a backrest. You can really appreciate that on a long ride
Here's a pic I took a few minutes ago of mine. I have an '06 Street Bob:
