I just jack the bike up until there's enough pressure off the rear wheel that the shock slides off. Then lower it as needed until the new 11" fits.

I jack up the rear and put a coffee can underneath it to keep the rear end from flopping down

Yes.... it is very easy. I used a lift, raised my bike and did one side at a time. Lowered the bike a bit between sides to line holes up and bolted right in.....VERY SIMPLE, and I am not a mechanic by any means....
