I was in the same place you are in.....I didn't know which way to go for bags. I kept telling myself there was no way I was going to spend $800 on a set of bags. Well, I did it anyway. I bought the Boss Bags and I'm glad I did. The pain only hurts for a while!

I also like the looks of the Saddlemen bags, but I read somewhere on here that the shock cutout ones aren't the way to go, they don't line up properly with the Dyna. Don't quote me on that though. I would just do the turn signal relocate and not worry about lining up a cutout.
I was in the same boat. I went with Willie and Max bags. Too be honest I am REALLY happy with the quality after finding them on the web for around $150 at www.motorcycle-superstore.com
Synthetic is cheaper, and yes has come a long way, but quality leather (not the leather that is the equivalent to pressboard, i.e, ground up, reconstituted leather is technically leather, but is crap) will last for years. That said of course one's available cash and budget usually had to be the determining factor.
