The dual rotors offer far better braking force and control than the single rotor.
I would have to say Harley dual disks on the fatbob are acceptable, but can be far better. I understand the front rotors are not a true full floating disk.
I have been working with front brake issues for close to a year now. Harley says my brakes are within spec. and the rotor run out is only .06, which is acceptable. While braking with the front break I get a noticeable surge (change in braking force) at very specific spots on the rotor. The only relief I have been able to get at this point is by rotating one of the rotors 180 degrees so that the run out on the rotors are located at a different position to the other. Harley warranty has been no help on the issue and at this point I think a new set of full floating rotors are in the future.
Lots of folks haven't been through the MSF course or any riding course. I recommend it above all else. You should evenly apply both brakes but if you forget, know that most (70%) of your stopping power is in the front.
I'm in the same field as many with in the FBS who don't like that the dual rotors cover the entire wheel but I've been searching for rotors that would allow more visibility of the wheel but keep the stopping power.
