Quite frankly; if I wanted to go any faster than my current bike, I'd build somethinng like this with an 88" motor; seems counter productive to do a high performance build on a bike that weighs over half a ton with rider.
I wrestled with the same question a couple years ago when I decided I wanted a bigger motor. Fortunately, up the road from me is Rosa's Cycle Shop (some of you guys not from LI may have heard of them as their work is frequently found in the mags; American Iron, IronWorks), and they do some of the best performance work around.
Rather than just buying some manufacturers motor, they basically built a custom motor which delivers awesome power but is also streetable and reliable. Some of the components which went into the build are listed on my sig.
Now I don't know if there are any reputable performance shops out by you that have the experience and really know what they're doing, but if there are that may be worth looking into.
