I don't carry spare eye wear
rain gear is as easy as a trash bag, my general rain gear is gloves and riding jacket right now, haven't needed much more
I don't use a ground cloth
toilet kit is covered in toiletries (i may have forgotten to list it)
I use a generic backpacking 1st aid kit that has a couple ace bandages/bandaids/insect bite/bee sting kit/anti-biotic ointment
bike tool/repair kit doesn't leave the bike. I have a bag mounted between the handle bars with a few hand tools, anything else I'm calling AAA
If you guys are looking for some interesting camping ideas look into ultralight backpacking. You can get some very interesting gear from every day items.
Yes I can strap a shotgun to my backpack. If a cop pulls me over I simply tell them it isn't loaded and I'm going camping, the gear in my backpack proves that pretty fast. NRS straps can be used for just about anything.

This is from 09 at the Best Western in Butte Mont. when my sons and I were headed to Alaska.
Those saddle bags are two big ammo boxes. He had a big duffel bar across them that he had already taken to the room. He has 27k on it now and has covered a good part of the US with that set up.
He's 6'5" and that's him checking out his brothers BMW for the first time.
My bike is the Buell Ulysses. It is a great bike to tour on. And I can just yank it up off of the ground if need be. Not like my Ultra.

I think that most people do overpack based off of my experience and the repeated confessions of riders on all forums.
Below is a photo of what I carried on my trip to/from Daytona. I had a small waist/fanny pack that I kept camera and other bits like shaving kit etc. in tankbah held a few pairs of socks shirts etc.... had several people comment that "You sure do travel light
