6'3" 250lbs on a 07 Dyna FDX with 3+ forwards and mini apes. Fits like a glove, want a Road King, but don't want to get rid of the Dyna. Go for the FDX and customize it to suite you.
You're going to want forward controls at 6'. I'm 6' 3" and was really cramped with mids. Can always change them if the bike you like has mid controls, but might as well just get one that already has forwards.
I'm 6'3" and have mids on my FXDX. It does become an issue if I ride with them for hours, I get some hip pain on my left side, but I love them for cornering, feel like I have more control. I have Highway pegs for the long rides so I don't get any hip issues.
Since you've ridden dirt bikes you will probably be fine. Just make sure you take a motorcycle safety course. They teach you things that aren't relevant to dirt biking, but very important for being on the road with cars/trucks.

Agree. I had years on the dirt and probably between 5,000 and 10,000 miles on the street when I took the safety course and found that it was worth it. Although as I write this, I figure you're gonna have to take the course to ride on a military base.
Despite dirtbiking with mids, I also think you'll want forward controls.
I hadn't ridden a motorcycle since I was about 10 yrs old before I took the Motorcycle Training Course to get my license. Then, found which Harley I liked best, and got my Wide Glide.
So, my first bike ever is a Harley Dyna Wide Glide and it was a good decision!

I had the exact same self induced questioning and decision making. I am 50+ years old, 5' 10" @ 180 lbs. I've always wanted to ride but never could do it until 2 years ago. I never rode dirt bikes - nothin'. I took the Motorcycle Safety Foundation course this spring - first time on a 2-wheel. I purchased a Dyna Wide Glide and I am pleased to say it was an easy adjustment. I am comfortable, but NOT too comfortable. It's simple - remember that you know your limitations and skill level. The gray matter between your ears will guide you. Listen to it and grow with it. You'll know what feels safe.

My first ride was a '03 Superglide Sport. Weight was not an issue for me. I'm 6'1" 220 lbs. The only riding that I had ever done before I bought the bike was on a YZ125 dirt bike years earlier. It sounds like you're an experienced rider on lighter bikes. No worries. You'll be fine.
