Well, it probably wouldn't be worth it to my way of thinking. But this is a wife we're talking about here. Telling them no can be tougher than it sounds.
I was just wondering if there was a conversion kit or something available. Honestly, I'm not even entirely sure what all would be involved with something like that.
1- Convince the wife that carburetors are very old technology and that she really needs a new EFI bike.
2- Convince her that your Bob is a better bike for her than her ancient (2 years old) FXDL and trade bikes.
3- Since you now have an old bike, you are now in need a new one.
4- Proceede to the dealer of your choice and get a new EFI Bob.

This seems like a VERY good solution to me................. Probably less expensive in the long run.
Orrrr.... find some old curmudgeon like me who hates FI and swap her lowrider straight across for a nearly new FI Street Bob.Unless it's one of those too pretty shiny two tone paint over chromed,.. oh nevermind.

It's possible yes.
But it's not really worth the hassle and problems.
You have to get a LOAD of parts and they wouldn't be cheap. You'd need a new intake manifold, fuel injectors, ECM (computer), etc. It's just not really worth it in my opinion.
The best solution is to just trade the bike in a pick up a new or used 06-07. Not only would you get EFI but you'd get all of the upgrades of the new Dyna line which alone is WELL worth it.
In my opinion (for what it's worth) it's not even a tough decision. EFI is wonderful.

Only problem with that is that they changed the Low Rider slightly after '05. The new ones sit a bit differently and didn't feel quite right to her like the older one did. She didn't like the '07 Low Rider at all compared to the '05, otherwise she'd have probably gotten a newer one in the first place. The only other bike in the place that didn't feel unweildy to her was the Sportster Low, and she said even that felt more top-heavy than the '05 Low Rider
So if it's not feasible to put EFI on the bike she's got... she may be S.O.L. and have to suffer with a carb.
