Whether a 2-1 out-performs a 2-2 depends entirely on the designs. There are crap examples of both out there. Pointless to choose one over the other without like-for-like dyno comparisons and they are as rare as rocking horse ****.
A lot of 2-1 systems that are supposed to be 'performance' exhausts give more to looks than function. The can needs to be pretty big for best top speed performance, about 10 times the engine volume. No 2-1 I know of for the Dyna is this big.
One advantage of the single can design is that it can incorporate a tuned baffle arrangement, like the disk-pack on the Supertrapp pipes. This is needed for true performance because otherwise you are hoping that one size fits all and that certainly is not the case.
Very rough rule of thumb though: 2-2s and 2-1-2s may perform better for top speed. 2-1s may make better low-mid torque. In practice though, exhaust systems are designed mostly for looks and moderate performance improvements over stock pipes and a "good" 2-2 or 2-1-2 may well outperform a "good" 2-1.
I just took off a set of thunder headers and installed V&H short shots. I made this change for the looks and was worried about losing low end torque. To my absolute surprise not only did I not lose anything...I now think she looks and runs better than before.
