Thought I'd give an update, now that the bike is tuned (mostly - I'm sure I'll mess with it some more) and I've had a chance to ride it for a week and a half.
The bottom line is, I really love it. I think the S&S 583 was a great choice of cams for my riding style. The bike doesn't pull super hard right from idle, so for a heavier bike or lots of 2-up riding I'm not sure I'd go with this cam. But from about 2200 RPM and up, it's noticeably more powerful and way more fun to ride.
I'm still not used to the rougher idle, or how much louder the bike is, but I do like the sound. The valvetrain ticking coming from the heads seems a bit louder as well, after the bike is warmed up, and I still find myself constantly listening for anything weird-sounding (post-mod paranoia I guess). But I really enjoy the difference it makes when I'm riding it, and now I'm a lot more likely to open up the throttle just to feel the bike stretch my arms out a bit.
