You ever see the MPG test done? It is on a machine, perfectly tuned vehicle, on cruise control, controlled by a computer. Under perfect ideal conditions.
When you change out anything you drop MPG, going for performance and increase in HP drops it even more, since you are now putting more gas into the vehicle.
There are so many variables it is beyond comprehension, I get right at 50 on my sporty, could probably get better if I did not push it once in a while.
I always got 32-35 in the city and 50 on the highway consistently until lately I am not sure what happened but anyways yes 50 mpg on the highway with short shots is possible.
I'd probably get higher in the city but I had to add fuel to the 0 position on the power commander to calm the popping down.
I have gotten a bit over 60mpg out of my dead stock 2009 under very
specialized circumstances... riding conservatively at very high altitude,
8,000 feet or more, where the EFI leans out a lot.
At my normal 5,000 - 6,000 foot altitude, I get 40-45 depending on how
much city riding I do. I accelerate hard cuz it's fun so my city numbers
are pretty bad, 35 or so. I ride fast on the highways, 80mph or so, but
steady throttle use gets me about 50mpg, sometimes better.
I plan fuel stops at a very conservative 180 mile range, but I have gotten
better than 230 out of a tank on several occasions.
I run a very hot high compression high performance set up. I'm over 130 hp and I struggle to get better than 44mpg interstate riding . Performance and sound take presidency ovr mpg. I'd call your numbers average and if you like your sound which I'm sure you fi as those pipes sound great I'd stop sweating mpgs. Your doing about what it should. If you really want more mpg go back to stock. Otherwise I'd say love it and leave it alone. Just my opinion .
There are a lot of things that effect your mpg... Type of fuel, riding habits, type of riding and the list goes on and on.
If you ride as hard as you say then that may be the best you will ever get. That is about it.
We get around 36-38 when we ride hard on our 2010 WG with SS106 but get 46-48 on the back roads riding like I should. It costs me 10mpg when I play. I do not do interstate on it much, very seldom we are on the interstate with the WG.
So I suppose you have a decision to make. Good mpg or play LOL
Even my SE SG 110 gets over 40 mph normally. Mainly because I use it to tour and play very little with it.
Just a thought
dd
Stock I got 48 mpg. Since Stage 1 (SE Pipes, DK Outlaw Low Profile A/C, Xied's) I now get 39 on flat Florida open road. Not much stop and go so your 35 mpg is about right specially with the custom performance tune.

That's damned good mileage for as many horses as you're making!
