Before I put on forward controls, I had some of the apprehension I detect about not feeling like you have as much control. But, after you adjust, you'll find you have just as much control and can ride as aggressively as you desire. It's just a matter of getting the feel of a different position.
It had been over a year since I'd ridden a bike with mid-mount controls and I tested an '07 SB ... it just felt strange to me (not like more control). I think it's a muscle memory kind of thing, like changing your batting stance or swing in baseball. Once you get used to it, it becomes second nature. -- My $0.02
WRT your question: if you have all the parts, it shouldn't be that hard to re-install mids--probably take an hour or two at most.
Which ever way you like is the way to go. I like the mids, I added a lindby bar and put hd pegs on each side. I had hwy pegs prior, they were ok, but I find on the open road this is the most comfortable position for me, I like the mids for town driving,more control. No right or wrong just preferance.
06 Bob with 4000 miles, just went to forwards last week and was looking forward to riding today but have sh!tty weather, so I'm still getting use to them. I'm only 5'7, the only thing I can see different is I can't stand on the pegs when going over bumps or tracks. I think I'm gonna like them. Besides, they look cool........ooh yea!

On my 2000 FXDX I customized the original mids and added matching stubby Highway pegs.
This combination has been perfect for the twisty mountain roads where I live.

I bought the bike in Dallas with forward controls only and rode it back to Ca.
By the time I got home my groin was killing me.
I bought the mid controls on ebay and just installed the pegs and I put heel pads on my forward controls.
I like to be able to switch to different positions on longer rides and also the mid pegs for mountain riding. The mid pegs fold up out of the way and can be used when needed.
Call me a rebel, but I like the mids. Keeping your feet under you keeps your center of gravity aligned with the bike and gives you better control. Check this video:
