Default Advice on stripping electrical?

I ride a 2013 Blackline, and the technology in it has me a bit sour. Between ECMs, BCMs, fuel injection, error codes, etc., I'm thinking of purchasing an older Wide Glide and stripping down the electrical to the bare minimum. Ideally, they'd be a headlight, tail/brake light, starter and alternator, and whatever is absolutely necessary for the bike to run. My question is how difficult would this be? I'm looking at an early 2000's model. Is there still too much technology in a 15 year old bike to do this without it being an enormous headache?

You could do it with a 2000, 2001-2002 is a better year, but they still have engine controls modules, tsms, to go pure, you need to go back to a points shovel.
