Hey. I read and seen mechanics torquing then loosening head bolts then re-torquing again on a twin cam but most only torque once.why the 2 different ways and which should one use. thanks.

Some people like to torque it once which compresses the head gasket and base gasket. Then loosen it up and re torque.
I like to do that but it's just a matter of preference.
Depends what gaskets you use too. If you're using mls gaskets, chuck the fsm specs out the window. They'll come with their own specs and procedure.
Usually torqueing them so far, waiting 20 minutes, torque a little more, wait another 20 minutes, then the final torque spec.
