Hate to spend your money on my advice but with an intermittent cutout like yours, that's the 2nd place to look. You've already swapped the coil. BTW, whatever module you run, it should be 3 ohm coil so if you put a 5 ohm on, probably best to go back to what you had when you get it sorted out.
That exact sensor with tip-over feature is n/a but any Evo cam sensor will work. Only difference is wire color (stripe), length and connector pins. Some of the other guys have the part number memorized and might chime in.

I believe the OP's bike has Duetch connectors so the best value would be the Standard Motor Products MC-SPA3 cam position sensor.. most retailers sell it now
I was also debating on buys a used VOS and trying that first before I do a new position sensor. I know the VOS is just vacuum for the timming, do you guys think it could be the problem?
Don't think the VOES is going to do that.. Because it only happens at higher RPM, have you checked your fuel flow to the carburetor..? Are you still running the vacuum operated petcock? You should be able to flow 5 oz of fuel in 8 seconds through the petcock. If you do have the OEM petcock you will need a vacuum pump to put vacuum on the back side of the petcock to open up the valve. Do that test and let's see what you get..
99% of the time, a problem arising after handlebar work is directly related. At the same time, I cannot picture your exact symptoms involving anything out of order with the switches. The "5069" looks like paint marker and makes me wonder if it was replaced some time ago with a used sensor.

I questioned that paint marking as well (to myself) like it did come off of a used bike..
He did say he had the tanks off and it does kinda sound like it's running out of fuel in the higher demand area of rpm's... Maybe he disturbed something in the tanks... Or the vacuum line to the petcock has a leak..

I read right over that and totally possible there's a vent or other issue on the fuel side. Still, doesn't explain the backfire and pegged out tach.
I'd go back to the handlebar wiring. Somewhere is a bare wire that's grounding out.
Higher RPM's equal more vibrations, especially on solid mounted evos.
