Ok but, when I pull the cam plate it will keep flowing?
If your bike is a Softail (and it looks like it may be... 95ci springer) yes the oil will continue to flow until the tank is empty. Softails have the oil tank above the crankcase so gravity will empty the tank unless you drain the tank first, or clamp off the oil lines.
Not so with Touring bikes and Dynas as the oil tank sits below the crankcase.

That is not true. The oil lines from the tank go to the pump and stop. That is why the tank has 3 quarts in it. If the oil stayed in the cam/crank case it would not be a dry sump engine. If the oil in the tank flows into the camchest when the engine is off then there is a problem with your cam plate/pump.
Oil will NOT flow out in a gush or stream...BUT it will seep through so you may need to plug a couple of oil holes while you have the cover off, otherwise you end up with a small puddle under the bike.
Once you have the cover off its fairly obvious which holes need plugging as they start to weep straight away.

Yes if you removed it from the cam plate. They make dandy alignment dowels for this. You only need 2.
