If you still have the stock vacuum operated petcock, get rid of it and get a pingel. It's not so much for the flow but for the reliability. They're right around 100. You'll never have to worry about it again. Good choice on the S&S. What have you done to your motor. I can help you with the initial jetting...
It's a stock 80 inch motor with an ev 27, cycle shack muffler pipes and ness big sucker a/c. I have had an s&s super e on the same motor in a different bike (same cam and pipes) and ran a pingel, I just have an issue with remembering to turn the gas off ( not to sound like a dumb a$$). I ran a 295 and a 74 and was happy with it. I'd like to stick with a vacuum operated petcock and I think pingel makes one, but I'm feeling like they don't flow as much fuel as a traditional petcock.
My stock '90 gas tap flows enough for the G on my S&S 107", so I say yes, your tap will be fine. I've had it dynoed twice, at over 100HP, and that tap was never questioned by my tame S&S indy. I have only changed recently to a Pingel tap to adapt a 6 gallon tank for my Glide.
