Had some good luck tonight. Got the old clutch cable off without a lot of drama. Was able to mostly leave the exhaust in place and just loosen it a bit.
Regarding the wires, the way i saw it my only options were new switch assembly with longer wires, or splice what I have. Decided to go with what I have.
Regarding the brake lines, that mostly came down to schedule. There are a few kits, but I wasn't certain if they were correct for my application. Decided to piece it together after mocking up the bars so I could be sure. If I had time for a false start or two, I might have gone a different route.

Im glad you chose those bars! By the way, try them out with them pushed as far forward as they will go without hitting the windshield or faring. It make my bike feel a lot more nimble and keeps me from getting shoulder pain on longer trips. Is your clutch cable going to work? Post a picture of your bike with the bars on it.

You will want to stagger the splices in the harness so the finished product doesn't look like the snake that ate the golf ball.
