Avon website recommends the Cobra 140/90B16 rear tire for my 95 Fatboy - I've always used the MT90B16.... will the wider tire make a difference or cause any problems or issues?

No, because they are the same size, with a different naming convention.
Edit: Misread your post. It's the same as a 130. MU is a 140 I think. If it doesn't rub anything (and if it did I doubt Avon would recommend it) it should be fine.

Owtlaw is having a hard day!
As he says, an MT is a 130/90. For some reason Avon don't make a 140/85, which is the size of the MU, they only make a 140/90, which has the same load rating as an MU. I have used a Venom of that size. What I found is that it is noticeably larger in rolling diameter than an MT. Being a little wider it rubbed my belt guard, so I removed the rubber curtain, by drilling through the rivets, leaving me a running clearance with the belt of 3/16". I used an allen key as a feeler gauge in that gap, when setting wheel alignment! I suspect their Cobra will be similar.
I've used Avons since the '70s on my Harleys and love 'em. However do check their website for recommended pressures, as they tend to be higher than stock tyres.
