I just replaced my stock front rim & tire with a 21". I have noticed that my speedometer is off. About 5 mph at 45 mph. Is there a fix for this or am I just going to have to live with it?
Chad, give us a hand! Is this a cable-drive or electronic speedo? It should be possible to get a suitable cable drive unit, I'm not sure about an electronic speedo.

It would have to be a cable driven speedo off the front wheel. Electronic speedometers are driven off the transmission and changing the front wheel would have no effect.

Speedo drive units can have different ratios - usually a bagger has a 2:1 ratio according to the replacement fitment charts. The 2240:60 ratio fitment list softail and dynas models but it would take more research to determine if those models have 21" wheels. The widths also vary. This might be a solution.
I replaced a stock 16" front wheel with a 19" enforcer wheel and that was less than 1/8" taller. I really didn't notice the change for my odometer.
Updated: Based on the Drag Specialties Fitment charts on the Dennis Kirk site, what I saw was the 2240:60 ratio was for models with 21" wheels.

speedhut.com 4 1/2 inch GPS speedo. I recently did mine and absolutely love it,it has the tach as well. gives a lot of info 0-60... 1/4 mile.... altitudes... direction....and even has a digital readout besides the pointer" in the display info screen. I dealt with the 21 inch front wheel issues on my shovelhead with front drive..it was always off roughly 7 mph ( @ 70 I would actually be doing about 62 ish* )..plus one less cable hanging off the front end of my 93 heritage softail dead nuts accurate.

I looked at them but none are water resistant.
