I Have a 97 FLHTCUI and I'm reading about the MM to carb conversion and how many have done it...Is there a kit for such or a list of parts to eliminate the guesswork and searching for individual items??? ANY help would be appreciated.

Been a few years since you may have to use search function. Search function is not wonderful on the app version so you may have to Google a specific search term.
I converted my 98 Ultra from mmi to carb. It is not that hard, but there are no off the shelf kits available. You will just need to pick a carb (with intake) and ignition you want to use and modify the tank to take a regular petcock (pingel makes a kit for that. I went with an S&S Super E Carb and an Ultima (in the cone) ignition. I also added a VOES. If you have specific questions pm me.

If they were a carb I could fix it for them, but they will have to wait for a tow and the Harly shop to open Tuesday morning.
Kit is available as I found one here http://4x4tuff.com/hs25.html when I was looking at the end of April after my 96 FLHTCI's crank position sensor went. If I had $1400.00 I would do it. These sensors and other parts for the 95-98 MMI are getting harder to find... I Ordered a CPS from Surdyke HD and it's back ordered from HD till August so ordered one from tiawan on ebay. It came real fast, only about a week. I do have my doubts that my order from HD will be filled. If it is I will probably put it on ebay.... Can't cancel special orders for nothing but store credit.
Hardest part of the job is getting your friggin hand in tank to cut......no wiring harness needed. More crap comes out than goes in. I use the Pringle pet ****.
The early tanks will have hard lines on the inside, you have to remove the nearest one. It's probably wise to remove the second one as well. I didn't find decent directions but this is what worked better than what I've read in my research.
1/2 copper tube cut to about a couple inches, wrapped in duct tape two layers, enough to thread into the hole tightly. Thread protector drill guide.
9/16 drill through hole with oil at high speed. The steel is soft.
The drill is large enough to break free through the tube and also be large enough for the petcock to slide in the adapter. I don't have a good solution to pass on for trimming down the height of the bung boss for maximizing fuel capacity.

Did one, Ultima 2000i ignition kit comes with a wire harness, Pingel petcock with the conversion fittings, CV and intake from a Twin Cam will fit a Evo, white wire with black tracer under the right side of the fuel tank is the only wire connection you need to power the Ultima system.
