Judging by the head gasket I would say they are the stock gaskets and that no one ever had the heads off. With that in mind I would say just a cam upgrade.. Even the springs are stock. are you doing any piston or head work.. Might want to, seeing your that deep...
S&S quicky pushrods are 3 full turns for .100 and 4 full turns for .125 I set them at .125 with any lifter that isn't stock
stock is fine ( .100 ) if your keeping it off the rev limiter or in the 5000 rpm range and lower anything higher go the .125
you can if you have a dial caliper...set the caliper to say .100, then take the adjustable end of the pushrod and set it tight , then adjust it out to till you reach the .100 ( or .125) and count the flats it takes to get there.

Not this time, dollars are bit short as we are buying a couple of investment properties. Will break her down in 6 months and do some piston and head work.

I was wondering how I could work this out, I was thinking about doing it the way you described but then dismissed it thinking...nah thats to simple lol. Sometimes the old K.I.S. Methods works.
