If you have a fuel injected bike then it has Magneti Marelli fuel injection.
That fuel injection system has an engine temperature sensor on front cylinder head.
Located deep in center of front cylinder head.
When the sensor fails the ECM (computer) gets wrong information and sends signals that flip/flop.
That confuses computer and makes it think it is hot and then cold.
The symptom is a run away throttle.
You can remove sensor and test it if you like.
Not a whole lot of tech to sensor as it only has two wires.
If you are on a trip then you could disconnect the idle control plug just behind the air box plate and that would disconnect the idle control motor.
BUT that would require you to hold throttle for start-up and warm-up.
Part is 32446-95a about $100 USA dollars.
You can address issue yourself with a deep socket, extension and basically minimal tools.
We are taking an educated guess here based on minimal information provided but again if the bike is fuel injected then the temp sensor is a known failed part with when that specific symptom is expressed.
