Those high RPM builds use Buell XB heads with a multi-stage porting and larger valves. He did an 883 conversion. While they do work the 883 heads most people don't pour money into them for obvious reasons so I'm assuming he just did the cylinders and doesn't need a better carb.
They can run real well, have a modded CV on the shelf being violent during acceleration, came across a Mikuni 45 for $75. Mikuni wins the off idle throttle but when the CV came in it did well, the R1(Super G clone) has never been a problem over the years on a stereotyped bad street manor engine. Carbs are just personal preference, they all get the job done, just different small tendencies.

There's tricks you can do to make the CV act more like a slide carb. First, drill out the venting hole in the slide. That will make it rise faster but it'll also make the throttle feel more "snatchy". You could also put a weaker spring over the slide but I've never messed around with doing that.
Whacking the throttoe WFO on a slide or butterfly carb often screws with the ratio because the air velocity is low thru the venturi and it's hard to tune, whereas on the CV the slide stays down to keep air velocity high so the mixture stays good.

There's tricks you can do to anything.. Why not just buy something and bolt it on and with a couple of minor adjustments and done... There you go easy peasy... This is what makes the S$S so desireable....
The Hammer site has stacks of info on suitable carbs and exhausts, along with dyno curves, so that would be a good place to look. Also their kit when used with stock heads gives a great boost in HP and TQ, porting them simply raises the performance at the top end. A 2-into-1 would certainly be my choice, as for carb, choose your poison, but I recommend you get it set up by a local tuning/dyno shop. I gave up messing with carbs years ago!
