On Aussie and NZ fuel, 200 main isn't as out there as our American cousins may think.
I ran a 200 on my 1998 Wide Glide, with an EV27 cam.
Hard to believe. I have also EV27 cam and I can not use that big main jet. Way too big yet for european gasoline. You drive most of the time with the the idle adjustment and intermediate jet, only when the full throttle you use the main jet.

Bear in mind how hot it gets in Aussie, you gotta keep it from running lean or the pistons melt, main also affects the intermediate settings as the intermediate draws fuel through the main jet.
But the real reason is the Drop Bears, the smell of unburnt fuel keeps them in the trees and off your head...

The new choke cable is in and working. While I had the carb off I threw in a #50 pilot jet just to see. SSDD (same **** different day). At a low Idle I can screw the mixture screw all the way in or all the way out (6 turns) with bugger all difference. I know 100% all the jets & passages are clear. The only way so far to get response from the screw is to use a #42 and then it's only 1 turn out. With the K&N and V&H it should need bigger. GMF.

The pilot jet works through the whole range from closed to wide open throttle. I'll throw the 42 back in but will keep a close eye on higher throttle settings. May need to shim the needle.
I can't test ride yet as I'm trying to sort out the new blinkers not blinking.
