after much research the cam is the EV27, giving me a wide range of performance . now s&s super E or mikuni hsr42
Really no need to change carbs on an 80"er with an EV27...the CV is a very good carb and your set up isn't going to outflow what the CV can deliver.

i actually worked on a bike this year that had 9.75 to 1, and it had signs of detonation with the ev27, i would say error on the safe side and use only 9.5 to 1. and i couldnt agree more about the cv, its a awesome carb. chad.
I'd use the 2-7 and Mikuni too. Very good choices. PM me if you want to sell your CV. Also, Doug has a very good point about lifters. I've seen them go in as little as 32,000 miles, and as much as 49,000 miles. Change the cam bearing while your at it.
If you're going to run the EV-27, I wouldn't worry about bumping the compression. If you're going to purchase a carb, Mikuni, no question or comparison. However, on a mild cam only build your CV should be more than adequate, just get it dialed in, and spend the money you save on an SE ignition module, or an aftermarket ignition like Dyna or Ultima. When you do the cam, do the lifters, everytime.
If you run solo most/all the time the EV46 (or comparable) cam works good in the Softails Running two-up, then I'd go with the EV27 (or comparable) cam. Both are 'bolt in' cams. As mentioned check the lifters and I'd install a set of adjustable pushrods.
Stock CV carb + SE air cleaner kit. Get the bike dyno-tuned by someone that knows how to set up the CV, and you won't be disappointed.
I run the EV27/CV/SE filter/Dyna2000/Supertrapp slipons combo in my 93 FLHS and as other have replied: It runs like it SHOULD HAVE run from The MoCo.
I just had an andrews ev46 cam installed with screaming eagle adj. pusrods, new torrington bearing, heavy breather air cleaner and v and h longshots and dyno jet kit on stock carb with dyno tune and i picked up 12 hp. at the wheel 67.49 hp 75.46 tq.
