I like my Edelbrock Qwiksilver II but they're hard to find so in it's place I'd use a CV with sportster needle, 45 idle jet and 185 main on your EVO. Throttle response will be just fine, although you may lose a nanosecond or two to a Mikuni or Edelbrock flatslide. I'm no expert but one of my riding buddies is and in his opinion the expense of the Mikuni is hard to justify until you're putting out 90 HP or more. You can get there just fine with the CV.
I just finished tuning my '97 Sportster Sport with that exact combination on the otherwise stock CV. It's running an open Supertrapp header with no muffler just a straight pipe and runs like stink. Love that little bike... ;-)
S & S are fine for every day use...ran a used one for the last 15 years without every having to crack it open. Mikuni's and CV's are fine too, the "tune" on the carb has more to do with how it performs, than what name is written on the side.
I've been trouble free with cv carb. There's a guy on ebay thats suppose to specialize in tuning them for performance.

Running the Mik 42 here on my superglide EVO with SE ignition, SE AC & muffs stock header along with EVL 2015 cam. 80Tq & 70Hp.
Very pleased with throttle response & milage. My 42 is setup with 17.5 pilot, 50 pumpjet & 165 main with 98 needle middle setting.

That's almost exactly the way my HSR42 is set up on my bike. I DID bump the pilot jet up to a #20. This seems to help with cold starting and the occasional cough on trailing throttle. I figure it's because we're forced to use E10 around here.
I have been wrenching Harley's for a couple of days (about 1,000,000) Played with a lot of carbs , I have tuned cv carbs with great results. I would put mine up against a S&S or Makunie any day.
