We bought my wife a used 03 Dyna Low Rider in Arizona a couple of years ago. It is carburated,, not injected. The previous owner had knocked the baffles out of the factory mufflers. The bike ran fairly smooth out there, but since we moved to South Carolina it runs pretty rough. Lots of spits, sputters, and hiccups.
I'm feeling like there is two issues going on.
#1- Knocking the baffles out has effected it. (Backpressure maybe)
#2- The change in altitude has effected it too. (Gone from desert to mass humidity)
I'm betting it needs a simple carb adjustment. Can anyone walk me thru adjusting the carb??
You are asking a real tricky question here. You are correct that the changes in ambient condition are more than likely the problem, but to have someone walk you through carb adjustments on the net probably won't work. A good "old school" carb tune needs to feel, hear and smell what is going on. Your best bet is to just drop a coupl've bucks and have it tuned by someone in your area that knows about them. JMO
What are you doing when you get the spits, sputters and hiccups? If at idle, off idle and low rpm roll ons, I would adjust the idle mixture screw out a little richer. You might also want to drop the float bowl and see what jets you have in there, especially the slow jet. If you were at high elevation in AZ, the bike would have run better being a little leaner than it would here at around 1000 feet.

Other way around,,,,, I was at sea level in AZ,,, sometimes below sea level.
Most of the issues occur at low RPM's. It's a booger to keep it running until it warms up.
