It was cammed but I do not know what the numbers are on it.

So should I use the 180 or 190? I have the 180 in but I have not put it on the bike yet, but if I am going to get more benifits with a 190 I will put it in...

First off, put some baffles in those pipes. Unless you at wide open throttle all the time, you're not doing anything for the performance of your bike. ANY engine needs a certain amount of back pressure to run properly at part throttle. Loud does not always equal fast. You'll be losing torque as well.
As far as the main goes, the only really way to tell is to ride the bike and see how it does with the 180. All of the following is in various spots in the forum. Find an open and rarely travelled back road, get the bike into 4th gear. Take the bike to full throttle and then roll off the throttle about an 1/8th turn, if the bike seems to accelerate or surge you're lean. If it bogs, you're rich. What you could do is find a shop with an exhaust gas analyser and some who knows how to use it and figure it out that way.
In terms of the back pressure and the baffles, that is why I put in the torque cones, that should give me enough back pressure. I had done the same thing with my xl1200s and the bike ran fine with the cones and no baffles, but if it acts up I will put them in.

Unless you are running it at over 5000 rpm all the time, you will need baffles to get the bike to run properly. Louder does NOT mean better performance! Right now, you are missing out on a lot of "streetable" torque, meaning torque in the 1500-3500 rpm range! A good dyno-tune will also make a world of difference. It's also VERY difficult to tune a bike that has open pipes, and while it's possible to jet the carb yourself, you will be very lucky if you get it right throughout the entire range of operation. It will take a empty back road, as Pauly said, and several high speed runs with several sets of new plugs to get it done right. That's my 2 cents....
Now my next question, do the torq cones help or should I just get them out? Are they overkill if I am going to run the baffles on?

Here's a link to a very good exhaust testing table. These guys put a lot of time and effort in finding the best (and worst) exhaust systems for a Harley. The ones with the highest "Street Power Ranking" will give you the best tree stump pulling mid-range torque... that's the torque that stretches your arms when you twist the throttle! The are a few 2-2 systems that score well, but the best are still the 2-1 systems.
