I run the Firestone Champion replicas from Coker Tire. That is what my bike would have been equipped with in 1946. I have been pleasantly surprised with my mileage and how well they handled in serious rain. No complaints at all. I do run at about 22-24 PSI depending on if the bike is packed or not. Also not expensive from Coker, get new rim strips and tubes when ordering. The rear tire has been on the bike since I got her running in 2015, must be at least 6-7k miles on that tire, still looks fine. I also have an 18" and 16" for the front, I think the 18" looks a little better and rides a bit nicer, 16" on the rear. Some guys swear by 18" on the rear for highway comfort, I never tried that though.
I also have a set of Firestone ANS replica tires from Coker for racing on sand or dirt. They to are a pleasant surprise even on the asphalt.
Keep in mind you are goin 55 MPH at best, she doesn't need Michelin Commander III's or the like. I am comfortable at 55 MPH, I have never felt the need for a tire upgrade for the Flathead. Good luck. All the way to Cali at 24 PSI, packed heavy!!!
It made it 3000 plus miles, I was about 20 miles from the Santa Monica pier and I hit a big dip in the road. Tour pak sides lifted off the base, the bolts holding the license plate on got caught on the bottom of the box and it never went back down. That pic is me on the side of the road, I had to empty it, get the wooden box back together with a hammer, then the ratchet strap was added to get the last 20 miles done. It was an interesting event so close to the end. Besides that it worked great, stuff inside stayed dry and I was able to lean on it as a back rest most of the time.
