I have the thermostat switch and they do not come on until the heads reach a certain temperature.
When I shut my engine off, the fans usually keep running for about two minutes but maybe a bit longer if the bike is good and hot.
I also have a factory oil cooler and my oil temperature (I have a dipstick thermostat) usually reads between 230-240 degrees in 75-80 degree temps.
