I agree with Hogs & Heifers. My wife and I were there on St Patricks Day. The barmaid--a hot little blonde--was drunk and was up on the bar with a bullhorn. You can't get more biker than that.

It really does depend on what your scene is. I've always had fun at the House of Blues (Mandalay Bay), and RumJungle (also Mandalay). Coyote Ugly in NY, NY is, well ok I guess (only been there once. Kindof fun I guess). I usually have my last lunch at the HD cafe, I happen to like the food and it's cool seeing the bikes go by (inside). I went to Toby Keith's last time I was there (stayed at Harrah's), it was pretty cool.
Now if you want to go to a local watering hole, you gotta talk to vegashd! I've been to several and had a blast (one of my best friends from high school lives in Vegas), but can't remember the names of any of them off the top of my head....must've been too plastered to remember!
Couldn't tell you on the nudie bars (personally); I used to like Cheetah's, but I haven't been to a Vegas strip club in years now.....
