I don't consider myself an electrical genius by any stretch of the imagination. So, with that said, how do you determine what can be attached to your battery and not overload it?

Add up the AMPs.
Actually you should be concerned with overloading the charging system (not the battery).
As long as your charging capacity exceeds your current draw you should be OK.
Another issue is wires, too many Amps and a wire will heat up and melt. This is what the fuses protect against.
