You can buy chaps that have a removable insulated liner, that's what I have and with long johns added I stay pretty comfortable down to 35 degrees. I have a cheap pair with no lining I wear in spring and I dont wear any chaps in the summer because it's too hot here in Arkansas.
Got a pair or those myself with the removable flannel liner. Warm as hell when it is in the high 20's - low 30's. Hands get a little numb though....!

All I have to say is buy a quality pair that fits you well. I am short at 5'4" and about 130. If I dont wear chaps I would burn my leg on my tailpipes, as well as buy many pairs of jeans because my 89 Sporty is territorial and covers my legs in oil as we ride. Oh what fun.
I had to order a bigger size in the waist so they would fit my legs. Took it to a saddlemaker and he fixed the waist. Looks very professional, and they work great. I know you got some leather workers in KY.

What he said- I followed their guide on how to measure online, ordered and they fit perfectly. If you're an odd size I believe they'll make some to fit you. The FC chaps are good and heavy, warm, too.
Just like everyone else has stated, go to a quality leather shop, most carry chaps and they'll size you up. I did that, they sized them, cut them and hemmed them on the spot. I only wear mine either when it's so damn cold or when it's raining. Way I look at it, if you don't like the way I look when i'm wearing them, don't look at me and if you don't have anything good to say, keep your pie hole shut....
