They also keep bugs off of your pants.

Since no one has mentioned it yet chaps are good for protecting your legs from scrub brush, thorns and horse hair.

Chaps are pretty much unbeatable when herding cattle. They protect your legs from brush and the herd. A lot of motorcyclists wear them, but they are a distant second to leather over-pants at keeping your nuts warm and dry.

I only have the toe-less ones, they allow my feet to breath better, and they are more affordable.

I wear them on long trips when it's cool enough.
