That is a really cool poster, Cliff. I know that's what the poster says and that's what HD's site says, but several CVO owners have taken it upon themselves to research and specifically ask HD Customer Service about production numbers for these bikes, myself being one of them. We also found that the majority of the time, there were twice as many Green bikes for sale than Blues. Blue FXR3s come up for sale less often, leading to the conclusion that less were produced.
The attachment is circa 2008 I believe. All of the numbers are correct, with the exception of the Blue FXR3. At another forum I am apart of, a registry was created in an attempt to track down all supposed "64". We soon realized that the VINs spanned more than 64 and almost 50% of the "64" bikes had been found. There were simply too many available for sale at one time to have only 64 in existence. It has now been reported multiple times from HD that only 300 in blue have been made. Your guess it as good as mine if that really is correct either.
By the way, would you consider selling that poster to a CVO FXR owner, like myself?
The poster is stapled up in my shed probally since 1999/2000 so it's not in the best of shape. That being said if you want it you can have it for what it would cost to ship to you. I don't have one of these bikes so it dosn't have any value to me. Tomorrow I have something to do after work but once I get home I will remove it from the shed wall. I'll have to look around for a shipping tube, post office should have something I suppose. PM me when you can.

As far as I recall, Arresting Red has only been used on this specific model (FXR2) while Victory Red was a production color back in 1995-1997

That is correct information. The unique aspect to the Arresting Red is the hologram feature to the Harley Davidson script. No other bike has it, at least from the factory. It's too bad you are so far away from me (hoethree), we could've met up.
