First off the bars wont fall off... Could loosen and then you could still steer it easily untill you could retighten. Tell them you want a demonstration at 95 mph.
A more to real life , front brake lock up. That happened to me at 55 mph.

65 isn't that fast so these riders are ignorant.
A. Your handlebars wouldn't come off in your hands if it is 1980 and newer...think about the mounting, wiring, and cable attachments-can't happen.
B. Suspending normal disbelief- like others have said you can grab either turn signals or the top of your triple trees and steer it off the road ala cafe style...DO NOT hit the brakes! coast to a stop and let enertia/drag stop you.
I'd look for better riders- send them out for a roll of flight line..
Pull in the clutch, hit the kill switch and grab the trees with both hands, then cost to a stop while gently applying rear brakes.
Immediately followed by a change of underwear.
