I have a pair of HD standard chaps. They are unlined and do a decent job of protecting from moderate cold and road debris kicked up by other traffic.
I also have a pair of Foxcreek leather over pants. They have a removable liner and go on or off just like chaps, (full length zipper).
They have pockets like a pair of jeans and do a better job when it's colder.
Harley has a "delux" chaps? What's the difference in them and the "regular" chaps? How much are they? I'm guessing you could probably get 2-3 pair from another leather company.
About 6 years ago I got a pair of chaps from HD. They have vents on them like a jacket. Genius idea. They let air in and you can wear them on warmer days no problem. I have never seen them offered again, but it is something to look for.
I purchased a pair two years ago. The only reason that I bought them was that I was out of town and the weather turned cooler than I had planned for. The liner was a bonus and helped keep the temperature manageable. I've only worn them three or four times but have been pleased with their performance. I don't care for the embossing but they have been functional.
I bought a pair of the H-D "Stock" pair about 5-years ago. Needless to say in South Texas I only get to use them a couple of days a year. THey are unlined but if I'm riding in "real" cold weather, like in the 40's, I wear long johns too.

I have a pair of "stock/regular" ones that I got for last winter, when long johns, 2 pair of sweat pants and jeans wasn't warm enough. I just never heard of the delux ones.
