Running Petrol / Ethanol mix
My thinking is that even with just a 20% mixture I gain the capacity to run a higher compression ratio which would be apparent on and off the can - the cam I will run is the S&S 640 cam.
Obviously, range is a real issue but it is one I think I can tackle sufficiently such that I don't waste $1,000s on an engine rebuild given the nature of my riding.
Any advice, experience with such endeavors, comments etc would be greatly appreciated

I run sort'a the reverse of what you describe.
Where I live 93 octane ethanol is the best commonly-available pump gas.
The 120R in my motor is dyno-tuned for 93 but winter-blend gasoline here is borderline as far as pre-detonation with a tuned engine. So I recently started running a blend of 93 ethanol and 100 non-ethanol race fuel and it seems to work well. Blend is 2 gallons 100 non-ethanol and top-off with 93 ethanol.
I drive 40 miles to get race fuel from a gasoline station pump.
I once owned a 1984 Shovel that ran 103 octane from VP Racing Fuels but that was years ago.
You might consider adding toluene to your regular fuel. Toluene is 121 RON, 107 MON and 114 octane R+M/2.
Some folks use xylene but I haven't done that yet. Xylene is 118/115.

Whilst this isn't forced induction all the lovely research the English did during WW2 afterwards on Methanol injection on the Merlin engines makes for fascinating reading on the benefits.
