So I was driving to work knowing my oil was low, well of course that’s never good. On the highway the bike lost power for a few seconds then jumped back up to 100%, it did this twice then ran full power until I parked it. When I pulled off the highway I began to hear the engine start knocking/ tapping. I proceeded to pull into the parking lot at work and checked, wasn’t completely dry of oil but it was super low.
Well I’ve fixed the leak and added oil and went to turn her over again and still hearing the knock, is it new engine time or any remedy’s?

Well. if you hurt it, running it out of oil, it aint gonna heal itself.

What was the leak? Exactly how low was the oil? Any recent engine work, or modifications to the engine?
Just trying to get an idea, since your post is so vague, and requires a crystal ball for diagnosis.
Maybe post a video so we can determine if this is a bottom end knock, or simply a ticking from the top end
Profile says 88 sportster 883. Don't sure how you managed to kill an 883, but you must have done a lot more than just run it low on oil. Unless it was completely bone dry
oh well, just another 883 biting the dust, no biggie!
the issue is that the return comes in with spurts and a lot of entrained vapors. so if the tank looked low, was probably lower than it seemed when you factor in foaming.
however, the engine is more about volume than pressure and the crank get first crack at getting what oil is there so i would run a boreoscope to look at the cylinders, especially the rear.
