Right now I get some popping on decel when temps are up. I was told I will notice a difference in throttle response and it should cool my bike down a bit.
Looking forward to trying it out.
Any opinions or suggestions?

Now , make sure you don't have any exhaust leaks to start or you will always have a popping issue that will be hard to get rid of .
V&H may recommend doing an auto tune , but with just a standard stage 1 , you should be ok with just some minor adjustments to get it tuned just right .
Later on , you could try running the auto tune feature and seeing if there is any improvement . the program will create a new spot just for the autotuned map , so if you want to go back to the original map ( not the stock one ) you can .
Example :
Slot #1 = Stock Map , your original map on the bike right now
Slot #2 = New Flash , the map they recommend , aggressive setting , trying the firecracker setting to get rid of popping .
Slot #3 = Autotune , the map above that will be tuned . If the autotune doesn't work out , you can reflash the bike back to #2 and delete #3 or resume autotune and see if it improves .
If you end up having a hard time dialing it in , you can also upload the map to V&H and they can make changes to your map and send back to you . Call them first and explain to them whats going on , most of the time they can get you going over the phone .

Right now I'm getting great MPG for fuel. It seems to run a tad hot, I guess it's lean. Looking to improve throttle response and cooling it down a bit and maybe less popping on decel.

I have a stage 1 but with Rinehart slip ons. There is no map for Rineharts so I used the autotune first. It was good and then I called V&H as suggested above and they suggested a map already in the system. I flased it in and it made a really nice difference. I set the decel pop to 1 firecracker and bike runs awesome!
The autotune takes a while to get all the cells filled. You will never get them all filled so don't worry about that. You will have to do alot of different riding speeds to get the autotune working correctly. As suggested above give V&H a call and they will get you dialed in.
The Fuel Pac is an awesome piece and is really easy to use once you get it figured out. Good luck.
I'm no expert, but I learned a lot about how my ride behaves by watching the real time data... MAP sensor, TPS sensor, AFR target, Engine Temp, Intake Air Temp. I kind of geeked out and began tweaking the tune - like AFR richer for WOT, but a bit leaner for the RPM and throttle range where I cruise. I also increased the acceleration enrichment a couple points, which gives a brief surge of extra fuel when you roll on throttle. That seemed to have the biggest effect of throwing me back when I roll on throttle
One thing I noticed about the FP3 canned maps was that the AFR and the Spark Advance maps are the same across the board for my model (2015 Softail). The only thing that is different from map to map is the volumetric efficiency tables, which are basically fudge factors that your bike has preset to help her hit her AFR targets. So if you are wide open throttle at 3000 rpm, your AFR map might be commanding 12.8:1 air/fuel but if your VE table isn't tuned right in that square, she might be running way leaner like 13.5:1, but thinking she's right on target (or richer). So Autotune helps that square get much closer to the right value... maybe 12.7 or 12.9
Its important to realize that autotune doesn't do anything to the AFR or the spark advance tables to maximize torque or horsepower... that's what a professional tuner would do (I hope).
If your model has it, you can also turn on EITMS which helps you not roast at long stop lights. If you have automatic compression release, make sure to turn that switch on for easier startup.
Took the bike for a short ride to the gas station. What I first noticed is how fast the bike runs in each gear. I was in third gear and running 45MPH, it felt like it was in 4th gear already, does that make sense? I mean, it seems to be much more faster in the top end of the RPMs. When it stops raining I'm heading back out.
My only problem is......
Where the hell is there room for it under that seat ? I really want to hook it up and leave it so I can run autotune it. Man, it's super tight under there and I don't see any place for it.

Started it up and I was riding to work. Before hitting the freeway, the temp sensor was at about 180 and just like clockwork, a little backfire and then it dies. On the side of the road it starts back up and I immediately looked for trouble codes and got this one -
B2201 - Ignition Switch off with VSS
The description says check for open circuit or damage in ignition switch signal wire to BCM
So I guess that is something. Of course after I restarted and got it fully warmed up it went the remaining 30 minutes to work with no incidents. I guess it is a clue but not sure how to isolate the problem based on this.
