I have seen a map that adjusted the timing for a bike with ac and pipes only, but when I had mine dyno'd they said that they don't mess with timing unless you change cams...

I'm happy with the results and so I can't disagree with them. Before I had the dyno work done, I ran the custom map that was supposedly for my bike with the ac and pipes that had been from another bike... and the map that I ended up with from the dyno tune is much better than the one that had the ignition timing "tweaked".

If you don't have any issues it's probably wise not to mees with it.
My tuner added 5 to all columns in the 0 throttle position to prevent
decel popping. If that's an issue for you, it's worth a try.
There are also some additions @ 80 and 100 throttle positions.
