I have been riding my 78xlh for the past two weeks two and from work, at 4am. Coldest so far was a 35 degree morning.
On the colder mornings (below 40) the carb will sometimes "pop" or "hiccup" at steady throttle and sometimes on acceleration. Seems to happen more the colder it gets. No popping on the ride home when its been 45-50 degrees F. Added info, I am using a Mikuni VM-38 with a K&N Air cleaner.
My theory is that because cold air is more dense, it creates a lean condition with the same jets that usually work well in warmer weather. Is this crazy, and would it explain my popping?
I am not certain regarding your theory, but yes, the colder it gets........ the longer it takes the engine to warm up.
Both my ironhead and Dyna both 'spit' until they have warmed up. At 30° that can be as long as 15 minutes.
The fuel to air mixture needs to be close to 1:15 to ignite properly, and a cold temp most likely affects this mixture, so I concur with you regarding your theory.

yes the bike will be way lean on very cold days, i tune mine so its good on cold days, then when its warmer its a little on the rich side witch is way better than lean.lean and heat is a bad combo
