Interstate or not? Turnpike to I-75N to CR484 to Dunnellon. CR484 turns into CR40 to US 19N to SR24W. If you aren't interested in interstate travel then this: Turnpike to Wildwood US301 exit to SR 44 thru Inverness(remaing on SR44) to Crystal River. SR44 dead ends into US19 here. US19N to SR24W to Cedar Key. There are many other routes but to avoid the stop and go you will probably need to use the Turnpike.
May I ask as to why you are going to Cedar Key? Its a great place that is still somewhat reminiscent of old Florida, but is pretty small. My wife and I spent much time there when we lived close. Have a safe trip and if you have any questions do not hesitate to ask. I must also be honest ant tell you that I am much more knowledgable about North Florida thna the Orlando area.

Make sure you get some Tonys clam chowder. Supposed to be the best in the world.
If your there Sunday evening a blast down the cedar key airport runway a cheap thrill.
Personally, I'd spend the time in crystal river. Bigger, small boat rentals and manatees.
