Your planned route looks fine. There's a gas stop at least every 20 miles on the major hiways. And a Harley shop about every 50 miles.
When I was in high school I worked at the Big Texan in Amarillo. It's a good place to stop for a meat fix.
In Austin, one of my favorite places to eat is Guero's on Congress Ave. The margaritas there are powerful and the food is off the chart.
It's a few blocks down Congress from the Capital Bldg.
As for the Corpus area I prefer Mustang Island and Port Aransas to the other areas. Less congested and great food in town.
Well taking this one day at a time, we are still planning, making sure all hotels have a good cancellation policy. Got through New Mexico planning last night, Texas will start tonight. We will see if that generates more questions.
The wife and I are doing a cross country trip, May and June this year. Bike is being shipped to San Diego, we will fly out to meet the bike then start our ride to Florida. Then we will take a left and head north back to NY. That is the plan is a nutshell. We are in deep planning stages, so far we have Cali, Arizona and I think New Mexico all set up, but I have some concerns with Texas. mostly just because of the size of the place, you guys are living large down there. We also have concerns with fuel and being a little too far out in the middle of nowhere. Eastern Montana was just desolate for hotels and such, not looking to repeat that experience. So here is a map of my general route as currently thought out, we will be coming in from NM heading towards Amarillo.
1- Looking for advice on the route, particularity from Amarillo to Big Bend NP and then Corpus Christi.
2- Also if I was only going to do one town on the gulf, would you suggest CC, South Padre Island or Galveston? After Texas we are going to New Orleans, so we need to end in the southeast.
3- Currently we are bypassing Dallas, she has been for work and tells me it is just a City, any reason I need to go to Dallas?
4- Anything else you guys might have for me along this route, things to see, bars to have a drink in, etc.

I live in Amarillo and your route between Taos NM and here will have plenty of gas stations available. There are an abundance of motels and hotels in Amarillo as well. As has been stated before there is the Big Texan Steak Ranch that is a popular tourist attraction.
Palo Duro Canyon State Park is 30 miles south of Amarillo. It is like a mini Grand Canyon where you can ride to the bottom and that's always popular as well.
On your route there is Russells Truck & Travel Center in New Mexico on I-40. Russells has a nice Route 66 Diner, clean restrooms, a general store and a free car museum which is worth seeing when you stop for gas. Russells is 240 miles from Taos and that will probably be your second stop for gas.
Traveling south from Amarillo to Lubbock is Interstate 27 with plenty of gas stations available.

Take a look at Fort Davis, TX. From Amarillo its about 400 miles. In my travels, I found Fort Davis to be much more interesting than oil towns Midland/Odessa. If you ride Palo Duro in the morning youd still be fine for Fort Davis. Just a thought.

You're right about Midland being half-way between Amarillo and Terlingua, We've never spent the night there because it's only 240 miles and we usually arrive there about lunch time leaving at 8:00 AM. Last time we rode 345 miles to Fort Stockton and spent the night. Depending on who we ride with and how hot it is we have ridden the whole 490 miles in one day, but like you said there's no hurry.
Midland is the oil capitol of the world so they have many hotels and motels to choose from and usually the highest gas prices in Texas.
I get that you're not on an IBA and Midland will be a leisurely ride. There are dealers in Amarillo, Lubbock and the Midland-Odessa area should you need anything.
