I didn't read all the replys, but don't forget the Hill Country, the Three Sisters ride (335, 336, 337 in and around Leakey, Medina. I live in Kerrville and can guide you.
I agree with Rode Runner. Some of the best riding in Texas. We stayed in Kerrville last May to ride the sisters. Love that country.

Unfortunately, I haven't been to either, but others could guide you better. I think for a one-nighter you'd be fine with either. Maybe MIdland has a little more, not sure.

I guess I can't stress enough, The Hill Country (3 Sisters) IS part of Texas I'd think you'd remember and enjoy. Will it be hot, yep. Will it be dry, possibly, Will it have great BBQ, most definitely. I think everyone needs to explore it once. And if you do Bend Bend, Hill Country, and San Anton... You'll have big memories from a big state.

I agree with you on the Big Texan. I only mentioned it because it is popular tourist attraction. I take out of town family there just for the experience. Otherwise I don't go there.
Update, decided on Fort Stockton for the lay over from Amarillo. Decided it was worth the extra 100 miles to be closer to Big Bend the next morning. Thinking in the morning head towards Presidio and enter the park form the West heading towards Terlingua for two nights. Going to be my birthday the next day, seems like a good place to be when turning 50.
Next leg is Terlingua to Corpus, hugging the Mexican border. Del Rio is half way, seems like a lot of nothing at say 350 miles from Terlingua. Any suggestions or recommendation for making it a 2 day ride to Corpus?
