How fast do you ride? . And how often do you stop? Seriously…?..
For example, it’s about 1,400 miles from my house to Dallas. The last time I drive there in my Bugatti Veyron I kept the Speedo at 200 mph. So, I could have made it in 7 hours. Except that at that speed, she only gets 1.5 mpg, and with her 26 gallon tank…I had to stop for fuel every 40 miles…which was a problem because there aren’t fuel stations every 40 miles. So, I had to pre arrange for trucks to stage every 40 miles to top me off. And each fuel stop took 15 minutes. So, with the 35 required stops that added 8.75 hours to the trip. So, it took me 15.75 hours. I hope this helps.

Going to Texas next month from LA/OC area, approx 800 miles. how long should this take me? 10-12 hrs?
Actually Tri gave you a great response.
Also, try tis. Go to google maps, put in your starting and ending point. This will give you a great estimate as to how long it will take if your drive straight thru.
Now, for me, I would not ride 800 miles in one day - usually try 400 or even less. Remember, you are on a bike - how long can you sit. Also consider other things like rain, etc.
Lots of variables in your question.
Weather and time of day in getting across there can play a huge part.
If your coming through Phoenix ,AZ El Paso,Tx traffic can play hell with time.
Have you made a trip similar to this before?
What part of W Texas are you headed to?
Use google maps to get an idea then add some time.
Stopping for fuel, potty breaks, food and just a break, i did fort worth to san Diego in about 21 hrs and did an over night. If im not mistaken, its a lot further than 800 miles...
