Texas and the Gulf coast are probably the most rideable during that time of the year. In Texas running down to about El Paso and then proceeding east to Big Bend and along the Texas/Mexico border until you get to the coast can provide some OK riding (some good scenery, some boring as all get out). But generally mother nature is not going to shut you down for long. Once you get to Del Rio, you could head to my neck of the woods in Central Texas and ride some of state's better rides, such as Three Sisters.
Texas could definitely provide a few days of cruising.

As stated, Texas Big Bend, the lower portion of New Mexico and Arizona but we also get occasional snow here so it would be good to check out the forecast.
