Thank you all - This is great - We have changed our plans to July/Aug time frame now, which will be perfect since it is always hot here and looking on line at the weather there during that time makes more sense to us.

6 or 7 years ago I rode up to Portland Oregon and on a whim I took a day trip to the south side of Mt St. Helens. I can't remember the exact road but it was beautiful up there.
In May the weather in western Washington is a crap shoot, it could be 80 and sunny or 45 and rainy. The best weather is in July or August. If May is your only option bring your rain gear. The weather east of the Cascade Mts . is drier and warmer that time of year and there is some great riding over there . Getting over the Cascades from Seattle you have 5 different passes to choose from. My favorites are Chinook Pass HWY 410, Stevens Pass HWY 2 and North Cascade HWY 20. You can make a loop out them go over one and return to Seattle on the other. I would stay off Snoqualmie Pass I-90 the other passes are far more scenic then I-90.
